- 1 pound ground chicken
- 1/2 pound shrimp, peeled and deveined
- 2 garlic cloves, minced
- 1 tablespoon ginger, minced
- 2 green onions, chopped
- 1 egg
- 1/4 cup breadcrumbs
- 4 cups chicken broth
- 2 cups bok choy, chopped
- 1 cup mushrooms, sliced
- Soy sauce, to taste
- Salt and pepper, to taste
- Cilantro, for garnish
Instructions
- Prep your ingredients by finely dicing garlic and ginger, chopping green onions and mushrooms, and rinsing and chopping bok choy.
- In a large mixing bowl, combine ground chicken, diced shrimp, minced garlic, ginger, green onions, egg, breadcrumbs, salt, and pepper. Mix until well combined.
- Form the mixture into small meatballs, about 1 inch in diameter, yielding around 20 meatballs.
- In a large pot, bring chicken broth to a gentle simmer over medium heat.
- Gently add the meatballs to the simmering broth, cooking for about 10 minutes or until cooked through.
- Add bok choy and mushrooms to the pot, cooking for an additional 5 minutes until bok choy is tender.
- Taste the broth and season with soy sauce, salt, and pepper as desired. Serve hot!
Notes
Leftovers can be stored in airtight containers in the fridge for up to three days.
