Description

A wholesome and nutritious one-dish meal that combines chicken, sweet potatoes, and Brussels sprouts with wild rice for a delightful family dinner.


Ingredients

  • 1 lb chicken breast, diced
  • 2 cups sweet potatoes, cubed
  • 2 cups Brussels sprouts, halved
  • 1 cup wild rice, uncooked
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp thyme (optional)
  • 1 tsp rosemary (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Combine chicken, sweet potatoes, Brussels sprouts, wild rice, onion, and garlic in a baking dish.
  3. Drizzle with olive oil, season with salt and pepper, and mix well.
  4. Pour chicken broth over the mixture and stir.
  5. Cover with foil and bake for 45 minutes.
  6. Remove foil and bake for an additional 15-20 minutes until cooked through.
  7. Let cool slightly, then serve.

Notes

For the best flavor, soak wild rice in water for 30 minutes before cooking. Feel free to customize with other seasonal vegetables or spices.
