- 1 lb chicken breast, diced
- 2 cups sweet potatoes, cubed
- 2 cups Brussels sprouts, halved
- 1 cup wild rice, uncooked
- 4 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 tsp thyme (optional)
- 1 tsp rosemary (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Combine chicken, sweet potatoes, Brussels sprouts, wild rice, onion, and garlic in a baking dish.
- Drizzle with olive oil, season with salt and pepper, and mix well.
- Pour chicken broth over the mixture and stir.
- Cover with foil and bake for 45 minutes.
- Remove foil and bake for an additional 15-20 minutes until cooked through.
- Let cool slightly, then serve.
Notes
For the best flavor, soak wild rice in water for 30 minutes before cooking. Feel free to customize with other seasonal vegetables or spices.
