- 2 chicken breasts
- 1 cup mushrooms, sliced
- 1 cup heavy cream
- 1/2 cup Asiago cheese, grated
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Chopped parsley, for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper, then cook for 6-7 minutes on each side. Set aside.
- Sauté mushrooms until softened, about 5 minutes.
- Lower heat, add heavy cream, Dijon mustard, and Asiago cheese. Stir until smooth.
- Return chicken to skillet, coat with sauce, and simmer for 2-3 minutes. Garnish with parsley.
Notes
Serve over pasta, rice, or a bed of greens for a complete meal. Can be customized with seasonal vegetables.
