- 4 boneless chicken breasts
- Salt and pepper to taste
- 1 cup all-purpose flour
- 4 tablespoons olive oil
- 1 cup sliced mushrooms
- 1 cup Madeira wine
- 1 cup chicken broth
- 1 tablespoon butter
- Chopped parsley for garnish
Instructions
- Season the chicken breasts generously with salt and pepper, then coat lightly with flour.
- In a large skillet, heat olive oil over medium heat. Once hot, add the chicken breasts and cook until browned on both sides, about 5-6 minutes per side. Remove and set aside.
- In the same skillet, add sliced mushrooms, cooking until soft.
- Pour in the Madeira wine, scraping the bottom of the skillet to release flavorful bits. Allow it to simmer for a few minutes to reduce slightly.
- Add the chicken broth and return the chicken to the skillet. Cover and let it simmer for 15-20 minutes until the chicken is cooked through.
- Remove from heat, and stir in the tablespoon of butter.
- Serve garnished with freshly chopped parsley.
