Description

A deliciously irresistible Chicken Madeira, transforming simple ingredients into a gourmet meal with savory chicken breasts, earthy mushrooms, and Madeira wine.


Ingredients

  • 4 boneless chicken breasts
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 4 tablespoons olive oil
  • 1 cup sliced mushrooms
  • 1 cup Madeira wine
  • 1 cup chicken broth
  • 1 tablespoon butter
  • Chopped parsley for garnish

Instructions

  1. Season the chicken breasts generously with salt and pepper, then coat lightly with flour.
  2. In a large skillet, heat olive oil over medium heat. Once hot, add the chicken breasts and cook until browned on both sides, about 5-6 minutes per side. Remove and set aside.
  3. In the same skillet, add sliced mushrooms, cooking until soft.
  4. Pour in the Madeira wine, scraping the bottom of the skillet to release flavorful bits. Allow it to simmer for a few minutes to reduce slightly.
  5. Add the chicken broth and return the chicken to the skillet. Cover and let it simmer for 15-20 minutes until the chicken is cooked through.
  6. Remove from heat, and stir in the tablespoon of butter.
  7. Serve garnished with freshly chopped parsley.
