- 1 lb boneless, skinless chicken breasts (sliced into thin strips)
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 bell pepper (sliced, any color)
- 1 onion (sliced)
- Juice of 1 lime
- Tortillas (flour or corn)
- Toppings (such as sour cream, guacamole, salsa, shredded cheese, and fresh cilantro)
Instructions
- In a bowl, mix the sliced chicken, olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper. Toss until the chicken is well coated.
- Let the chicken marinate for at least 15 minutes, or up to 1 hour in the refrigerator for more flavor.
- Heat a large skillet over medium-high heat.
- Add the marinated chicken to the skillet and cook for about 5–7 minutes, stirring occasionally, until the chicken is cooked through and no longer pink.
- Add the sliced bell pepper and onion to the skillet and cook for an additional 3–4 minutes until the vegetables are tender and slightly charred.
- Squeeze the juice of 1 lime over the chicken and vegetables, stirring to combine.
- Warm the tortillas in a separate skillet or in the microwave.
- Serve the chicken and vegetable mixture in the warm tortillas and add your favorite toppings.
