Description

Ingredients

  • 1 lb boneless, skinless chicken breasts (sliced into thin strips)
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bell pepper (sliced, any color)
  • 1 onion (sliced)
  • Juice of 1 lime
  • Tortillas (flour or corn)
  • Toppings (such as sour cream, guacamole, salsa, shredded cheese, and fresh cilantro)

Instructions

  1. In a bowl, mix the sliced chicken, olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper. Toss until the chicken is well coated.
  2. Let the chicken marinate for at least 15 minutes, or up to 1 hour in the refrigerator for more flavor.
  3. Heat a large skillet over medium-high heat.
  4. Add the marinated chicken to the skillet and cook for about 5–7 minutes, stirring occasionally, until the chicken is cooked through and no longer pink.
  5. Add the sliced bell pepper and onion to the skillet and cook for an additional 3–4 minutes until the vegetables are tender and slightly charred.
  6. Squeeze the juice of 1 lime over the chicken and vegetables, stirring to combine.
  7. Warm the tortillas in a separate skillet or in the microwave.
  8. Serve the chicken and vegetable mixture in the warm tortillas and add your favorite toppings.
