Ingredients

Scale
  • 1 cup cooked chicken, shredded
  • 1 cup cooked rice
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion, carrots, celery, and garlic until tender.
  3. Stir in chicken broth and bring to a boil.
  4. Add chicken, rice, thyme, salt, and pepper. Simmer for 10 minutes.
