Ingredients

- 2 medium spaghetti squash
- 2 tbsp olive oil
- Salt and black pepper, to taste
- 2 cups fresh spinach
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup fresh sage, chopped
Instructions
- Preheat oven to 400°F (200°C).
- Prepare squash as described and roast for 30-40 minutes.
- Sauté garlic and sage, then add spinach until wilted.
- Mix in cheeses and season.
- Shred the squash, mix with filling, and refill shells.
- Bake for an additional 10-15 minutes until cheese bubbles.
Notes
For a creamier filling, fold in cream cheese with the ricotta. Can be made dairy-free with appropriate substitutions.
