Description

A delicious and healthy dish featuring tender spaghetti squash filled with a creamy cheesy spinach mixture, topped with garlic sage butter.


Ingredients

Scale
  • 2 medium spaghetti squash
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup fresh sage, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Prepare squash as described and roast for 30-40 minutes.
  3. Sauté garlic and sage, then add spinach until wilted.
  4. Mix in cheeses and season.
  5. Shred the squash, mix with filling, and refill shells.
  6. Bake for an additional 10-15 minutes until cheese bubbles.

Notes

For a creamier filling, fold in cream cheese with the ricotta. Can be made dairy-free with appropriate substitutions.
