- 2 cups mashed potatoes
- 1 cup shredded cheese
- 1/4 cup chopped green onions
- 1/2 cup breadcrumbs
- 1 egg
- Salt and pepper to taste
- Oil for frying
Instructions
- In a large bowl, combine mashed potatoes, shredded cheese, chopped green onions, egg, salt, and pepper.
- Using your hands, form small puffs about the size of a golf ball.
- Roll each puff in breadcrumbs until evenly coated.
- Heat oil in a frying pan over medium heat.
- Fry the puffs in batches, cooking for 3-4 minutes on each side until golden and crispy.
- Remove and drain on paper towels. Serve warm.
