- 1 cup pinto beans, cooked and drained
- 1 cup breadcrumbs
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped onion
- 1/4 cup milk
- 1/4 cup ketchup
- 1 tablespoon chili powder
- 2 eggs
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine ground beef, pinto beans, breadcrumbs, cheddar cheese, onion, milk, ketchup, chili powder, eggs, salt, and pepper. Mix until well combined.
- Transfer the mixture to a loaf pan and shape it into a loaf.
- Top with additional ketchup or chili glaze if desired.
- Bake for 1 hour or until cooked through. Allow to cool for a few minutes before slicing.
