- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons red food coloring
- 2 1/2 cups all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon cornstarch
- 1/2 teaspoon salt
- 1 cup white chocolate chips
- 8 oz cream cheese, softened
- 1 1/2 cups powdered sugar
- 1 teaspoon vanilla extract (for filling)
Instructions
- Prepare the filling by beating cream cheese until smooth, then mix in powdered sugar and vanilla. Set aside.
- Cream butter, brown sugar, and granulated sugar together in a large bowl until light and fluffy. Beat in eggs one at a time, then add vanilla and red food coloring.
- Sift together flour, cocoa powder, baking soda, cornstarch, and salt in a separate bowl. Gradually mix dry ingredients into the wet mixture, then fold in white chocolate chips.
- Scoop 2 tablespoons of cookie dough, flatten it, and place 1 tablespoon of cheesecake filling in the center. Wrap the dough around the filling and form a ball.
- Place cookie balls on a parchment-lined baking sheet, spaced 2 inches apart. Bake at 350°F for 9-11 minutes until edges are set but centers are soft. Let cool for 5 minutes before transferring to a rack.
Notes
For best results, chill the dough before baking. Overfilling the cookies can cause them to leak during baking.
