Description

Delicious red velvet cookies with a creamy cheesecake center, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons red food coloring
  • 2 1/2 cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon cornstarch
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips
  • 8 oz cream cheese, softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Prepare the filling by beating cream cheese until smooth, then mix in powdered sugar and vanilla. Set aside.
  2. Cream butter, brown sugar, and granulated sugar together in a large bowl until light and fluffy. Beat in eggs one at a time, then add vanilla and red food coloring.
  3. Sift together flour, cocoa powder, baking soda, cornstarch, and salt in a separate bowl. Gradually mix dry ingredients into the wet mixture, then fold in white chocolate chips.
  4. Scoop 2 tablespoons of cookie dough, flatten it, and place 1 tablespoon of cheesecake filling in the center. Wrap the dough around the filling and form a ball.
  5. Place cookie balls on a parchment-lined baking sheet, spaced 2 inches apart. Bake at 350°F for 9-11 minutes until edges are set but centers are soft. Let cool for 5 minutes before transferring to a rack.

Notes

For best results, chill the dough before baking. Overfilling the cookies can cause them to leak during baking.
