- 1 pound ground beef (or turkey)
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1/4 cup flour
- 4 cups chicken or beef broth
- 1 cup heavy cream
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- 2 cups macaroni noodles
- 1 cup matchstick carrots
- 1 cup sharp cheddar cheese, shredded
- 1/2 cup parmesan cheese, shredded
- Salt and pepper, to taste
Instructions
- In a large pot, heat olive oil over medium heat, brown the ground beef for 7–9 minutes.
- Add diced onion and minced garlic, sauté until translucent (3–4 minutes).
- Sprinkle in flour, mix well and cook for 1–2 minutes.
- Pour in chicken (or beef) broth and bring to a boil, scraping up browned bits.
- Add heavy cream, onion powder, Italian seasoning, and paprika; stir to combine.
- Mix in matchstick carrots and macaroni, cook until pasta is al dente (8–10 minutes).
- Remove from heat, stir in cheddar and parmesan until melted.
- Let sit for a minute to thicken before serving.
Notes
Optional add-ins include diced pickles or a swirl of mustard for added cheeseburger flavor. This soup is best enjoyed with fresh toppings like chives or pickles.
