Description

Ingredients

  • 1 pound ground beef (or turkey)
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup flour
  • 4 cups chicken or beef broth
  • 1 cup heavy cream
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 2 cups macaroni noodles
  • 1 cup matchstick carrots
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup parmesan cheese, shredded
  • Salt and pepper, to taste

Instructions

  1. In a large pot, heat olive oil over medium heat, brown the ground beef for 7–9 minutes.
  2. Add diced onion and minced garlic, sauté until translucent (3–4 minutes).
  3. Sprinkle in flour, mix well and cook for 1–2 minutes.
  4. Pour in chicken (or beef) broth and bring to a boil, scraping up browned bits.
  5. Add heavy cream, onion powder, Italian seasoning, and paprika; stir to combine.
  6. Mix in matchstick carrots and macaroni, cook until pasta is al dente (8–10 minutes).
  7. Remove from heat, stir in cheddar and parmesan until melted.
  8. Let sit for a minute to thicken before serving.

Notes

Optional add-ins include diced pickles or a swirl of mustard for added cheeseburger flavor. This soup is best enjoyed with fresh toppings like chives or pickles.
