Description

A quick and easy recipe combining tender chicken, crunchy cashews, and vibrant vegetables, all served over fluffy rice.


Ingredients

  • 2 cups chicken, cubed
  • 1 cup cashews
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper, to taste
  • Cooked rice, for serving

Instructions

  1. In a large skillet, heat vegetable oil over medium heat.
  2. Add chicken and cook until browned, about 7-8 minutes.
  3. Add garlic, onion, and bell pepper; sauté until softened, about 3-4 minutes.
  4. Stir in cashews, soy sauce, oyster sauce, salt, and pepper; cook for an additional 2-3 minutes until well combined.
  5. Serve hot over cooked rice.

Notes

Adjust the vegetables based on your preference and feel free to add chili flakes for a bit of heat.
