- 1 lb sirloin, cubed
- 1 lb ground beef
- 4 strips bacon
- 4 cups beef broth
- 2 tbsp tallow or bacon grease
- 1 tbsp paprika
- 1 tsp garlic powder
- 1 tsp cayenne pepper
- Salt to taste
- Optional toppings: shredded cheese, sour cream, guacamole
Instructions
- Cook the bacon in the oven or stovetop until crispy (about 10 minutes). Reserve some for garnish.
- Preheat a medium Dutch oven over medium-high heat and add the tallow or bacon grease.
- Sear the sirloin chunks for 2-3 minutes per side, then remove and set aside.
- Brown the ground beef for about 15 minutes until fully cooked.
- Return the sirloin to the pot, add beef broth, and bring to a boil. Reduce heat and simmer uncovered for about 30 minutes.
- Crumble the bacon into small pieces and add to the chili.
- Taste and adjust seasoning as needed. Serve hot, garnished with your choice of toppings.
