Description

A delicious and creamy rotini pasta dish featuring flavorful Cajun chicken and a cheesy garlic sauce.


Ingredients

  • 8 oz rotini pasta
  • 1 lb chicken breast, diced
  • 2 tbsp Cajun seasoning
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook the rotini pasta according to package instructions; drain and set aside.
  2. Season the diced chicken with Cajun seasoning, salt, and pepper.
  3. Heat olive oil in a large skillet over medium heat; add the chicken and cook until browned and cooked through.
  4. Add minced garlic to the skillet; sauté for 1 minute until fragrant.
  5. Pour in the heavy cream and bring to a simmer.
  6. Stir in the mozzarella and Parmesan cheese until melted and combined.
  7. Toss the cooked rotini with the sauce and chicken; mix well.
  8. Garnish with fresh parsley before serving.

Notes

For extra heat, add more Cajun seasoning or a pinch of cayenne pepper.
