Description
Buffalo Chicken and Blue Cheese Slaw Burgers offer a spicy twist on the classic chicken sandwich.
Ingredients

- 2–3 chicken breasts (1.5–2 pounds)
- 1 cup buffalo sauce (Sweet Baby Ray’s recommended)
- 6 slices mozzarella cheese
- 6 cups coleslaw (pre-made or homemade)
- 1 recipe blue cheese dressing
- 6 potato hamburger buns
Instructions
- Place the chicken breasts in a slow cooker or Instant Pot and pour the buffalo sauce over them to evenly coat. Cook until tender, approximately 2 hours in a slow cooker or 25-30 minutes in an Instant Pot.
- Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the buffalo sauce.
- Place the shredded buffalo chicken on each potato bun base, then top with a slice of mozzarella cheese.
- Briefly broil or bake the burgers to melt the cheese.
- Mix the coleslaw with the blue cheese dressing until well combined.
- Add a generous scoop of blue cheese slaw on top of the chicken and cheese, cover with the top bun, and serve immediately.
Notes
- Use quality buffalo sauce for best flavor.
- Make the blue cheese dressing ahead of time.
- For extra crunch, add pickles to the burgers.
