Description

Buffalo Chicken and Blue Cheese Slaw Burgers offer a spicy twist on the classic chicken sandwich.


Ingredients

  • 23 chicken breasts (1.52 pounds)
  • 1 cup buffalo sauce (Sweet Baby Ray’s recommended)
  • 6 slices mozzarella cheese
  • 6 cups coleslaw (pre-made or homemade)
  • 1 recipe blue cheese dressing
  • 6 potato hamburger buns

Instructions

  1. Place the chicken breasts in a slow cooker or Instant Pot and pour the buffalo sauce over them to evenly coat. Cook until tender, approximately 2 hours in a slow cooker or 25-30 minutes in an Instant Pot.
  2. Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the buffalo sauce.
  3. Place the shredded buffalo chicken on each potato bun base, then top with a slice of mozzarella cheese.
  4. Briefly broil or bake the burgers to melt the cheese.
  5. Mix the coleslaw with the blue cheese dressing until well combined.
  6. Add a generous scoop of blue cheese slaw on top of the chicken and cheese, cover with the top bun, and serve immediately.

  • Use quality buffalo sauce for best flavor.
  • Make the blue cheese dressing ahead of time.
  • For extra crunch, add pickles to the burgers.
