Delicious Broccoli Stir Fry with Crispy Tofu Delight
Ingredients

- 1.5 pounds broccoli
- 1 whole white onion
- 1 whole red bell pepper
- 8 ounces sliced mushrooms
- 1 inch fresh grated ginger
- 1 cup snow peas
- 3 tablespoons rice vinegar
- 2 tablespoons maple syrup
- 2 cloves garlic, minced
- 3 tablespoons soy sauce
- 0.25 teaspoon crushed red pepper flakes
- 1 package extra-firm tofu (14 ounces)
- 2 tablespoons cornstarch
- 2 cups prepared brown rice or grain of choice
Instructions
- Heat the wok to medium-high.
- Sauté garlic and half the grated ginger with mushrooms for 3-4 minutes until onions are translucent.
- Add broccoli florets and stir into the mixture, cooking for 5-7 minutes until bright and tender.
- Incorporate bell peppers and snow peas, tossing to combine. Cook for another 2-3 minutes.
- Remove from heat and toss in half the stir fry sauce.
- Whisk together remaining stir fry sauce ingredients in a bowl and set aside.
- Prepare tofu: Combine soy sauce and rice vinegar, then press and cut tofu into bite-sized pieces. Marinate for at least 2 hours.
- Drain excess marinade and toss tofu cubes with cornstarch.
- Preheat oven to 400°F. Arrange tofu on a baking mat or parchment paper, baking for 15 minutes, then flipping and baking for another 15 minutes.
- Toss cooked tofu in the stir fry sauce.
- Alternatively, preheat air fryer to 375°F and cook tofu for 10-15 minutes.
- Cook brown rice or selected grains per package instructions.
- Serve by placing cooked grain on a platter, drizzling with stir fry sauce, adding broccoli stir fry, and topping with crispy tofu.
