Delicious Broccoli Stir Fry with Crispy Tofu Delight


Ingredients

Scale
  • 1.5 pounds broccoli
  • 1 whole white onion
  • 1 whole red bell pepper
  • 8 ounces sliced mushrooms
  • 1 inch fresh grated ginger
  • 1 cup snow peas
  • 3 tablespoons rice vinegar
  • 2 tablespoons maple syrup
  • 2 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 0.25 teaspoon crushed red pepper flakes
  • 1 package extra-firm tofu (14 ounces)
  • 2 tablespoons cornstarch
  • 2 cups prepared brown rice or grain of choice

Instructions

  1. Heat the wok to medium-high.
  2. Sauté garlic and half the grated ginger with mushrooms for 3-4 minutes until onions are translucent.
  3. Add broccoli florets and stir into the mixture, cooking for 5-7 minutes until bright and tender.
  4. Incorporate bell peppers and snow peas, tossing to combine. Cook for another 2-3 minutes.
  5. Remove from heat and toss in half the stir fry sauce.
  6. Whisk together remaining stir fry sauce ingredients in a bowl and set aside.
  7. Prepare tofu: Combine soy sauce and rice vinegar, then press and cut tofu into bite-sized pieces. Marinate for at least 2 hours.
  8. Drain excess marinade and toss tofu cubes with cornstarch.
  9. Preheat oven to 400°F. Arrange tofu on a baking mat or parchment paper, baking for 15 minutes, then flipping and baking for another 15 minutes.
  10. Toss cooked tofu in the stir fry sauce.
  11. Alternatively, preheat air fryer to 375°F and cook tofu for 10-15 minutes.
  12. Cook brown rice or selected grains per package instructions.
  13. Serve by placing cooked grain on a platter, drizzling with stir fry sauce, adding broccoli stir fry, and topping with crispy tofu.
