Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 8 ounces mushrooms, sliced
  • 1 cup chicken broth
  • 1 cup polenta
  • 4 cups water
  • 1 cup shredded cheese (e.g., mozzarella or cheddar)
  • 1/2 cup milk or cream
  • Fresh parsley for garnish

Instructions

  1. Prep your ingredients by dicing the garlic and slicing the mushrooms.
  2. In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, and salt and pepper. Mix until just combined.
  3. Heat olive oil in a skillet over medium heat, add meatballs, and brown on all sides.
  4. Remove meatballs and add sliced mushrooms to the skillet. Sauté until softened.
  5. Pour in chicken broth, return the meatballs to the skillet, simmer, and cover for 15 minutes.
  6. In a separate pot, bring 4 cups of water to a boil, whisk in polenta, and cook until thickened.
  7. Stir in milk or cream and shredded cheese into polenta before serving.
  8. Plate cheesy polenta, top with meatballs and sauce, garnish with parsley.

Notes

You can customize the meatballs with additional spices or vegetables. For a dairy-free option, use non-dairy milk and cheese substitutes.
