- 8 ounces mushrooms, sliced
- 1 cup chicken broth
- 1 cup polenta
- 4 cups water

Instructions
- Prep your ingredients by dicing the garlic and slicing the mushrooms.
- In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, and salt and pepper. Mix until just combined.
- Heat olive oil in a skillet over medium heat, add meatballs, and brown on all sides.
- Remove meatballs and add sliced mushrooms to the skillet. Sauté until softened.
- Pour in chicken broth, return the meatballs to the skillet, simmer, and cover for 15 minutes.
- In a separate pot, bring 4 cups of water to a boil, whisk in polenta, and cook until thickened.
- Stir in milk or cream and shredded cheese into polenta before serving.
- Plate cheesy polenta, top with meatballs and sauce, garnish with parsley.
