Scale
- 1 sheet frozen puff pastry
- 2 cups fresh or frozen blackberries
- 1/3–1/2 cup sugar (adjust to taste)
- 1–2 tablespoons lemon juice
- 4–6 oz goat cheese, crumbled
- 1 egg, for egg wash
- 1 teaspoon lemon zest
- 1–2 teaspoons sugar mixed with a pinch of dried thyme for topping
Instructions

- Thaw the puff pastry for 20–25 minutes on a floured surface and roll out.
- Spread half of the cooled blackberry jam on one half of the pastry, crumble over goat cheese, and sprinkle with lemon zest.
- Fold the pastry over the filling, cut into strips, and twist each strip.
- Preheat oven to 400°F (200°C). Brush twists with egg wash and sprinkle with thyme-sugar mix.
- Bake for 16–18 minutes until golden. Cool for 5 minutes before serving warm.
Notes
Practice once or twice and note timing for the best results. Jam thickness is key for preventing soggy pastry.
