Description

Sweet-tart blackberry jam balanced with tangy goat cheese and flaky puff pastry, creating elegant twists perfect for appetizers.


Ingredients

  • 1 sheet frozen puff pastry
  • 2 cups fresh or frozen blackberries
  • 1/31/2 cup sugar (adjust to taste)
  • 12 tablespoons lemon juice
  • 46 oz goat cheese, crumbled
  • 1 egg, for egg wash
  • 1 teaspoon lemon zest
  • 12 teaspoons sugar mixed with a pinch of dried thyme for topping

Instructions

  1. In a medium saucepan, combine blackberries, water, lemon juice, and sugar. Cook over medium heat until thickened (about 20-30 minutes).
  2. Thaw the puff pastry for 20–25 minutes on a floured surface and roll out.
  3. Spread half of the cooled blackberry jam on one half of the pastry, crumble over goat cheese, and sprinkle with lemon zest.
  4. Fold the pastry over the filling, cut into strips, and twist each strip.
  5. Preheat oven to 400°F (200°C). Brush twists with egg wash and sprinkle with thyme-sugar mix.
  6. Bake for 16–18 minutes until golden. Cool for 5 minutes before serving warm.

Notes

Practice once or twice and note timing for the best results. Jam thickness is key for preventing soggy pastry.
