A delicious and easy Black Forest Swiss Roll combining rich chocolate sponge, fluffy cream, and juicy cherries, perfect for impressing guests.

- 4 large eggs
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1/3 cup cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup fresh or jarred cherries
- 1/2 cup chocolate chips
- 1/2 cup heavy cream (for ganache)
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- Beat eggs and sugar on high for about 5-6 minutes until pale and thick. Add vanilla extract.
- Sift in flour, cocoa powder, baking powder, and salt. Fold in gently.
- Spread batter evenly in a lined jelly roll pan and bake for 10-12 minutes.
- Dust a towel with powdered sugar and roll the cake onto it while warm. Allow it to cool completely in this shape.
- Beat heavy cream, powdered sugar, and vanilla until soft peaks form. Add cream cheese for a richer filling if desired.
- Unroll the cooled cake, spread the cherry cream leaving a border, and roll it back up. Wrap in plastic wrap and refrigerate.
- For ganache, heat 1/2 cup of cream, mix with chocolate chips, drizzle over the roll.
- Decorate with whipped cream, cherries, and chocolate shavings. Enjoy!
Notes
For a lighter roll, bake the sponge thinner and chill longer for better slicing results. Experiment with flavors like almond or add a layer of jam.
