Description

A delicious and easy Black Forest Swiss Roll combining rich chocolate sponge, fluffy cream, and juicy cherries, perfect for impressing guests.


Ingredients

  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup fresh or jarred cherries
  • 1/2 cup chocolate chips
  • 1/2 cup heavy cream (for ganache)
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Beat eggs and sugar on high for about 5-6 minutes until pale and thick. Add vanilla extract.
  3. Sift in flour, cocoa powder, baking powder, and salt. Fold in gently.
  4. Spread batter evenly in a lined jelly roll pan and bake for 10-12 minutes.
  5. Dust a towel with powdered sugar and roll the cake onto it while warm. Allow it to cool completely in this shape.
  6. Beat heavy cream, powdered sugar, and vanilla until soft peaks form. Add cream cheese for a richer filling if desired.
  7. Unroll the cooled cake, spread the cherry cream leaving a border, and roll it back up. Wrap in plastic wrap and refrigerate.
  8. For ganache, heat 1/2 cup of cream, mix with chocolate chips, drizzle over the roll.
  9. Decorate with whipped cream, cherries, and chocolate shavings. Enjoy!

Notes

For a lighter roll, bake the sponge thinner and chill longer for better slicing results. Experiment with flavors like almond or add a layer of jam.
