Description

A quick and delicious vegetarian pasta dish that can be made in just 30 minutes.


Ingredients

Scale
  • 8 oz of spaghetti
  • 2 tbsp of olive oil
  • 3 cloves of garlic, minced
  • 1 cup of cherry tomatoes, halved
  • 1 cup of spinach
  • 1/2 tsp of red pepper flakes
  • Salt to taste
  • Parmesan cheese for serving

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and red pepper flakes, and sauté for 1 minute.
  4. Stir in the cherry tomatoes and cook for 5 minutes, until they soften.
  5. Mix in the spinach and cook until wilted.
  6. Drain the spaghetti and add it to the skillet, tossing to combine.
  7. Season with salt and serve topped with Parmesan cheese.

Notes

Feel free to add other vegetables or herbs according to your preference.
