Ingredients

  • 1 lb beef, cubed
  • 8 oz mushrooms, sliced
  • 2 medium potatoes, diced
  • 1 can coconut milk
  • 2 tablespoons Massaman curry paste
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • Juice of 1 lime
  • Fresh cilantro, for garnish
  • Salt and pepper, to taste

Instructions

  1. Prep your ingredients by dicing the onion, garlic, ginger, and potatoes.
  2. Sauté the chopped onion, garlic, and ginger in a large pot over medium heat until fragrant and golden brown.
  3. Add the cubed beef and brown it on all sides for about 5 minutes.
  4. Stir in the Massaman curry paste and coat the beef well.
  5. Pour in the coconut milk and add the sliced mushrooms and diced potatoes. Bring to a gentle simmer.
  6. Reduce the heat to low and let the curry simmer until the potatoes are tender, about 15 minutes.
  7. Stir in the fish sauce, brown sugar, lime juice, and season with salt and pepper to taste.
  8. Ladle the curry into bowls and garnish with fresh cilantro before serving.
