- 1 lb beef, cubed
- 8 oz mushrooms, sliced
- 2 medium potatoes, diced
- 1 can coconut milk
- 2 tablespoons Massaman curry paste
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- Juice of 1 lime
- Fresh cilantro, for garnish
- Salt and pepper, to taste
Instructions
- Prep your ingredients by dicing the onion, garlic, ginger, and potatoes.
- Sauté the chopped onion, garlic, and ginger in a large pot over medium heat until fragrant and golden brown.
- Add the cubed beef and brown it on all sides for about 5 minutes.
- Stir in the Massaman curry paste and coat the beef well.
- Pour in the coconut milk and add the sliced mushrooms and diced potatoes. Bring to a gentle simmer.
- Reduce the heat to low and let the curry simmer until the potatoes are tender, about 15 minutes.
- Stir in the fish sauce, brown sugar, lime juice, and season with salt and pepper to taste.
- Ladle the curry into bowls and garnish with fresh cilantro before serving.
