Description

A comforting twist on the classic Reuben sandwich, this Baked Reuben Casserole is quick, easy, and family-approved.


Ingredients

  • 1 lb corned beef, chopped
  • 1 can (14 oz) sauerkraut, drained
  • 1 cup Swiss cheese, shredded
  • 1 cup Thousand Island dressing
  • 8 slices rye bread, cubed
  • 1/2 cup milk
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix corned beef, sauerkraut, Swiss cheese, and Thousand Island dressing.
  3. In another bowl, combine rye bread, milk, garlic powder, onion powder, salt, and pepper.
  4. Layer half the bread in a greased baking dish, top with the meat mixture, then the remaining bread.
  5. Bake for 30-35 minutes until golden brown.
  6. Let sit for a few minutes, then serve!
