Description

Quick and easy Baked Chicken Burritos filled with seasoned chicken, beans, and rice, topped with cheesy green chili sauce.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 4 large flour tortillas
  • 1 can (10 oz) green chili sauce
  • 1 cup shredded cheese (like cheddar or Monterey Jack)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine chicken, rice, beans, corn, half of the cheese, green chili sauce, spices, and salt and pepper to taste.
  3. Spoon the mixture onto the center of each tortilla, fold the sides in, then roll up tightly. Place seam-side down into a baking dish.
  4. Add remaining green chili sauce and cheese on top of the burritos.
  5. Cover with aluminum foil and bake for 20 minutes; remove the foil and bake for an additional 10 minutes.
  6. Garnish with fresh cilantro, serve hot, and enjoy!

Notes

For a creamy texture, consider adding sour cream to your filling. Feel free to customize with your favorite vegetables or cheeses.
