Quick and easy Baked Chicken Burritos filled with seasoned chicken, beans, and rice, topped with cheesy green chili sauce.

- 2 cups cooked chicken, shredded
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 4 large flour tortillas
- 1 can (10 oz) green chili sauce
- 1 cup shredded cheese (like cheddar or Monterey Jack)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine chicken, rice, beans, corn, half of the cheese, green chili sauce, spices, and salt and pepper to taste.
- Spoon the mixture onto the center of each tortilla, fold the sides in, then roll up tightly. Place seam-side down into a baking dish.
- Add remaining green chili sauce and cheese on top of the burritos.
- Cover with aluminum foil and bake for 20 minutes; remove the foil and bake for an additional 10 minutes.
- Garnish with fresh cilantro, serve hot, and enjoy!
Notes
For a creamy texture, consider adding sour cream to your filling. Feel free to customize with your favorite vegetables or cheeses.
