Ingredients

  • 1 lb chicken breast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon ginger, grated
  • 4 cups chicken broth
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat; sauté onion and garlic until fragrant.
  2. Add chopped carrots and celery; cook until softened.
  3. Stir in turmeric and ginger, cooking for another minute.
  4. Add chicken breast and chicken broth; bring to a boil.
  5. Reduce heat, cover, and let simmer for 20 minutes or until chicken is cooked through.
  6. Remove chicken, shred it with two forks, and return to pot. Season with salt and pepper to taste.
  7. Ladle into bowls and garnish with fresh parsley. Serve warm.
