- 2 stalks celery, chopped

- 4 cups chicken broth
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- Heat olive oil in a large pot over medium heat; sauté onion and garlic until fragrant.
- Add chopped carrots and celery; cook until softened.
- Stir in turmeric and ginger, cooking for another minute.
- Add chicken breast and chicken broth; bring to a boil.
- Reduce heat, cover, and let simmer for 20 minutes or until chicken is cooked through.
- Remove chicken, shred it with two forks, and return to pot. Season with salt and pepper to taste.
- Ladle into bowls and garnish with fresh parsley. Serve warm.
