- 1/4 cup sour cream (or Greek yogurt)
- 1/4 cup chopped green onions or chives
Instructions
- Wash and scrub the potatoes thoroughly, then pat them dry.
- Prick potatoes several times with a fork to vent steam.
- Drizzle with olive oil and rub evenly; season with salt and pepper.
- Arrange potatoes in a single layer in the air fryer basket.
- Cook at 400°F (200°C) for 40–50 minutes, checking at 40 minutes for doneness.
- Prep toppings (cook bacon, shred cheese, chop green onions) while potatoes are cooking.
- Slice each potato lengthwise and fluff the interior with a fork. Add cheese and return to the air fryer for 1-2 minutes until melted.
- Top with bacon, sour cream, green onions, and any additional toppings. Serve immediately.
