  • 1 tablespoon Dill (Fresh preferred or dried)
  • 1 pound Baby Potatoes (Halved or quartered)
  • 2 tablespoons Olive Oil (Can substitute with avocado oil)
  • 1 teaspoon Smoked Paprika (Regular paprika can be used)
  • 1 cup Greek Yogurt (2% or whole for best consistency)
  • 1 medium Cucumber (Grated and drained)
  • 1 clove Garlic (Minced)
  • 1 tablespoon Lemon Juice (For tangy brightness)
  • 1 teaspoon Dill (Optional for extra freshness)

Instructions

  1. Prepare the yogurt sauce by grating the cucumber finely and squeezing out excess water. Mix it with Greek yogurt, dill, lemon juice, and minced garlic. Chill while you prep the other ingredients.
  2. Preheat the air fryer to 400°F.
  3. Halve or quarter the baby potatoes. Coat them in olive oil, sprinkle with smoked paprika, salt, and pepper, and arrange in the air fryer basket.
  4. Air fry the potatoes for 15 minutes, shaking halfway through.
  5. Cut the salmon into 1.5-inch cubes. Toss with Dijon mustard, honey, lemon juice, and dill.
  6. Lower the air fryer temperature to 390°F.
  7. Place the salmon cubes in a single layer and cook for 6-8 minutes or until the internal temperature reaches 145°F.
  8. Serve with crispy potatoes, yogurt cucumber sauce, and optional lemon wedges.
