Description

A delicious homemade vegetable lasagna packed with layers of fresh vegetables and cheesy goodness.


Ingredients

Scale
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 1 egg
  • 3 cups spinach
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 2 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions.
  3. In a bowl, mix ricotta cheese, egg, spinach, and Italian seasoning; season with salt and pepper.
  4. Spread a layer of marinara sauce on the bottom of a baking dish.
  5. Layer 3 lasagna noodles, followed by half of the ricotta mixture, half of the zucchini, half of the bell pepper, and a layer of mozzarella.
  6. Repeat the layers, finishing with a final layer of noodles, marinara sauce, and mozzarella on top.
  7. Sprinkle Parmesan cheese over the top.
  8. Bake for 45 minutes or until cheese is bubbly.
  9. Let it cool for 10 minutes before slicing.

Notes

For best results, use fresh ingredients. Feel free to add other vegetables like mushrooms or carrots.
